Abstract
An effective Food Safety program includes
environmental monitoring as a verification tool
to understand if the program is allowing the
food processing facility to attain its goals.
Two key parts of an effective nvironmental
monitoring program is a plant assessment, and
data gathering through sample acquisition,
sample preparation and sample analysis. Proper
acquisition and preparation of a sample are
essential to ensuring the analysis will provide
reliable data for the food safety management to
make informed decisions and control unwanted
biological hazards. This presentation will focus
on plant assessment, sample acquisition, and
sample preparation to ensure the data from
analysis is not compromised.
Biography
Nancy Eggink has the role of Global
Technical Service Manager for 3M Microbiology.
Previous to joining 3M, Nancy held various Food
Safety and Quality Management roles in the dairy
industry for Dean Foods, Marigold Foods, and
Degussa. Prior to her career in the food
industry, Nancy held quality and study
coordination roles in the Pharmaceutical
industry. In her current role, Nancy is
responsible for the global team of professionals
that work with 3M customers, to identify
opportunities and solve problems. This global
team provides local support to the customer to
ensure quick and accurate solutions. Nancy holds
a Bachelor’s degree in Microbiology from South
Dakota State University, and a Master’s degree
in Management from the University of Phoenix.<back>
